the first food I ever made was muffins.
Really, it was probably a PB & J.
But hey, it was a long time ago.
I went basic, a raisin muffin. My repertoire grew, and surprisingly included carrot muffins, which, for sure at a young age I would never eat carrots willingly, but in a muffin? Sugar?
Heck YA! I was 12!
As I learned more about food and what it can do for us, I expanded into adding whole wheat, and more fruit or vegetables.
At one point in my 53 years, I worked at a national publishing firm, that included a very popular Canadian cooking magazine, and a test kitchen. I was lucky enough to be on the same floor as the kitchen and the smells wafted down to me all day long. Some days we even got to go in and try the food. Perfect for an emotional eater!
My love of food was a given. My love of creating food was cemented with the smells and the beautiful food photography I got to see, and later help create.
I know, in these days of Paleo, Keto and Gluten Free eating, we don’t always want white flour. Muffins are still akin to a piece of cake when you grab them through the drive through. I would rather bake my own, than buy these as a grab and go munchie. I just don’t find them appealing as a take out item.
They are just too easy to bake!
The following recipe is made with almond flour, and sustains me for a busy morning.
Substitute orange for the lemon in this recipe! Rasperries or cranberries! That’s the beauty of choice. And the beauty of ditching the drive through. These guys will give you some sustenance.
